Step 1: For the dough
Step 2: Warm the milk until it is lukewarm
Step 3: Add the milk to the bowl of a stand mixer fitted with a dough hook attachment
Step 4: Or to a large bowl if kneading by hand.
Step 5: Add the sugar to the milk
Step 6: Then sprinkle the yeast on top.
Step 7: Whisk the mixture and allow it to proof for about 5-10 minutes.
Step 8: Once the yeast is activated,
Step 9: Add the oil to the milk mixture
Step 10: Then add the flour and salt.
Step 11: If using a stand mixer
Step 12: Start mixing the dough on the lowest setting.
Step 13: Once the dough starts to form a ball, increase the speed to medium and knead for 6-8 minutes. Alternatively
Step 14: Knead for 10-12 minutes by hand.
Step 15: The dough is done when it is elastic, glossy, soft, and easily comes away from the sides of the bowl/surface.
Step 16: Add the dough to a lightly oiled bowl and cover with a clean, warm, damp kitchen towel.
Step 17: Let the dough rise for 1 1/2 hours,
Step 18: Or until doubled in size.
Step 19: Once the dough has risen and doubled in size, punch it down
Step 20: And transfer it to a clean surface.
Step 21: Form the dough into a rectangle, and then divide it into 8 equal-sized pieces
Step 22: Form each piece into a ball by pinching the edges inward, and then on a flat surface, roll the dough into a ball shape.
Step 23: Preheat the oven to 350 F.
Step 24: Lightly grease a 9-inch round baking dish, preferably metal as opposed to glass or ceramic. Beat the egg for the egg wash.
Step 25: Place each ball of dough in the baking dish 7 on outside 1 in center
Step 26: With an equal distance between each ball.
Step 27: Allow the dough to rise a second time for 30 minutes, or until the rolls have puffed up and filled the pan.
Step 28: Brush the tops of the dough with the egg wash
Step 29: Bake for 25 minutes, or until deep golden brown.
Step 30: While the rolls bake
Step 31: Make the garlic oil mixture.
Step 32: Finely mince the garlic, then combine it with the oil, dill and parsley.
Step 33: Brush the garlic-herb mixture over the rolls immediately after they come out of the oven.
Step 34: Allow the rolls to cool for 15 minutes
