Ingredients

The ingredients are:
  • 3 tablespoons unsalted butter
  • 2 cups frozen O'Brien potatoes (with onions & peppers)
  • 6 large eggs
  • 2 tablespoons milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup (4 ounces) Cheddar cheese, shredded
  • 6 slices bacon, cooked & crumbled

How to Make

  • Step 1: Place a 10 inch non-stick OVENPROOF skillet over medium heat. Add butter and melt. Add the frozen potatoes and cook, uncovered, until browned, stirring from time to time. About 10 minutes.

  • Step 2: In a bowl, whisk together the eggs, milk, salt and pepper. Pour over the browned potatoes. As the eggs start to cook, gently lift the edges of the potatoes with a spatula, and tilt the pan so that the uncooked egg flows underneath.

  • Step 3: Sprinkle the top evenly with the cheese. Place under the broiler for 2 minutes until set. Don't let the cheese burn!

  • Step 4: Remove from oven and sprinkle with the crumbled bacon. Additionally (optionally), you can garnish the top with diced tomatoes and chopped herbs of your choice. Or with sour cream and salsa.
