  • 1 cup raisins
  • ¾ cup water
  • 2 cup flour
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup walnuts, chopped
  • 1 tsp cinnamon
  • 1 teaspoon nutmeg
  • 2 cup quick oats
  • 2 eggs, beaten
  • ¾ cup oil
  • 1 teaspoon vanilla

How to Make

  • Step 1: Bring raisins to boil in ¾ cup water.

  • Step 2: Remove from heat let sit 5 minutes

  • Step 3: And drain 1/2 c. liquid to use in recipe.

  • Step 4: Then, drain the rest of liquid off thoroughly.

  • Step 5: Let ½ cup juice cool.

  • Step 6: Sift flour, sugar, baking soda, salt, cinnamon, and nutmeg in mixing bowl.

  • Step 7: Add oats to beaten eggs.

  • Step 8: Add oil, raisins, ½ c. raisin juice, and vanilla.

  • Step 9: Mix well.

  • Step 10: Add dry ingredients and mix well.

  • Step 11: Drop by rounded teaspoons onto greased cookie sheet and bake at 350º for 15-18 minutes.
