  • The following recipe serves 8 people.

Ingredients

The ingredients are:
  • 16 ounces pizza dough (for one large pizza)
  • 1 pound Yukon Gold potatoes (to equal 5 small yukon gold's. Weight is a guestimate)
  • 4 - 6 whole cloves garlic, peeled
  • 4 tablespoons butter
  • 3 tablespoons whipped cream cheese
  • 2 tablespoon sour cream
  • 1 teaspoon salt
  • Freshly ground black pepper, to taste
  • 1 clove garlic, minced
  • 1 1/2 cups cheddar cheese shredded (about 6 ounces, but use more or less to your liking)
  • 8 ounces bacon, cooked and chopped to bit size pieces (8 slices total. Weight is a guestimate)
  • 1/2 cup fresh chives or scallions, chopped (If using scallions, you may be needing more than 1/2 cup because the stalks are larger in volume than chives)
  • 1/4 cup sour cream for topping (The amount is approximate for serving, amount is up to you)

How to Make

  • Step 1: Peel and chop the potatoes and place in a saucepan along with the whole garlic cloves.

  • Step 2: Fill with cold water to an inch above the top of the potatoes. Simmer on the stove top until potatoes are fork-tender.

  • Step 3: Drain the potatoes and garlic; add the butter, cream cheese, 2 tablespoons of sour cream, salt and pepper.

  • Step 4: Mash until smooth or run it through a potato ricer.

  • Step 5: Taste for seasoning and adjust if necessary, keeping in mind that the cheese that will top the pizza will provide additional saltiness.

  • Step 6: Set aside.

  • Step 7: Preheat oven to 450 degrees-F with a pizza stone in it.

  • Step 8: On a pizza peel that has been dusted with cornmeal (or if you don't have a pizza peel you can use the back end of a cookie sheet), shape your dough and brush lightly with olive oil.

  • Step 9: Evenly (and gently, making sure not to tear the dough) spread the mashed potatoes on top of the pizza crust.

  • Step 10: Dot with chopped garlic.

  • Step 11: Top with the shredded cheddar cheese (amount of cheese is approximate). Use more or less to your liking.

  • Step 12: Bake the pizza until cheese is starting to brown and the crust is cooked through, 10 - 14 minutes.

  • Step 13: Top the pizza with the crumbled bacon and chives or scallions. (You can also add the bacon and scallions in the last 5 or so minutes before pulling the pizza out of the oven. If using chives, it's best to add them after pulling the pizza out of the oven because over cooking them will have them loose there taste.).

  • Step 14: Slice and serve the pizza with sour cream for topping.
