  • 3 egg whites, hard boiled,diced
  • 1 cup cherry tomatoes, quartered
  • 8 ounces cooked chicken breast,diced
  • 1 cup cucumber, diced
  • 1/2 cup garbanzo beans
  • 1/4 cup red onion, sliced
  • 2 ounces pecorino cheese, grated
  • Dressing:
  • ½ cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon fresh cracked black pepper
