Ingredients

The ingredients are:
  • 3 tablespoons olive oil
  • 1 cup yellow onion, fine dice
  • 1 carrot,diced
  • 2 celery ribs, fine dice
  • 1 clove garlic, smashed
  • 2 cups vegetable broth
  • 4 cups water
  • 1 can(15 ounces) petite diced tomatoes
  • 3 tablespoons lemon juice
  • 1 pound potatoes, peeled,diced
  • 4 ounces uncooked brown lentils,(½ cup)
  • 1 can (15 ounces) kidney beans, drained
  • 2 cups swiss chard, chopped
  • ¼ teaspoon baking soda
  • Spices:
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 tablespoons dried minced onions
  • 1 teaspoons chili powder
  • ¼ teaspoon cumin
  • 1 teaspoon salt
  • Garnish:
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh parsley, minced

How to Make

  • Step 1: Place the Spice in a small bowl, mix well, set aside.

  • Step 2: In a large stock pot,

  • Step 3: Add the oil diced onions and celery, sauté over medium-high heat until the veggies begin to soften, approximately 7 to 9 minutes, stirring periodically

  • Step 4: Add the garlic, sauté for 1 minute stirring constantly

  • Step 5: Then add all remaining the remaining soup ingredients ,

  • Step 6: Do not add the baking soda yet,

  • Step 7: Add Spice,

  • Step 8: Stir well to combine.

  • Step 9: Bring the mixture to a boil, then lower to a low simmering boil, add the baking soda, stir to combine.

  • Step 10: Cover with a tight-fitting lid.

  • Step 11: Simmer for 60 minutes stirring occasionally.

  • Step 12: Add seasoning to taste

  • Step 13: Stir in garnish last
