Ingredients

The ingredients are:
  • 3-4 tablespoons sugar
  • 2 limes, grated zest and juice
  • 3 pounds pineapple (1 pineapple)
  • 3 kiwi fruit
  • 2 tablespoons rum (optional)
  • 2 tablespoons bail leaves, silvered
  • Basil leaves or basil flowers, optional garnish

How to Make

  • Step 1: In a saucepan over medium heat add 3/4 cup water and the sugar and bring to a boil. Simmer until sugar dissolves. Stir in lime zest and let it steep while preparing the fruit.

  • Step 2: Cut off the top of the pineapple. Slice down the sides, removing the eyes. Quarter the fruit lengthwise, cutting away the core, then slice the pineapple into fan-shaped pieces about 3/8 of an inch thick. Peel and slice the kiwi into rounds and place them on a platter with the pineapple slices. Sprinkle with the lime juice and add kirsch or rum, if using.

  • Step 3: Add the silvered basil to the syrup and pour over the fruit. Chill and then serve garnished with basil leave or flowers.
