  • 70 grams lard
  • 500 grams flour (durum wheat flour, 17,63 oz)
  • 1 egg
  • 250 gram water
  • FOR FILLING
  • 500 grams Pecorino cheese (fresh, 17,63 oz)
  • 70 grams water
  • Lemon peel (1)
  • Honey, to taste

How to Make

  • Step 1: Prepare the dough by mixing the flour, the egg and the warm water. Knead by hand or with a planetary mixer, adding the lard in small doses. Let it rest for 30 minutes

  • Step 2: Grate the fresh cheese and melt it with the water over low heat.

  • Step 3: Add the lemon zest and spread a layer of about half an inch on a shelf to cool.

  • Step 4: Using a pastry cutter, form into a round shape, about 9 centimeters in diameter.
