  • 3 eggs, beaten
  • 1/8 cup milk
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 tablespoon butter
  • 1/2 cup chili with beans
  • 2 ounces cheddar cheese,(1/4 cup)
  • 1 tablespoon onion, minced
  • 1 tablespoon jalapeno pepper, minced,(pickled)
  • Topping:
  • 1/4 cup tomatoes
  • 1 teaspoon cilantro, minced
  • 1 green onion, minced
  • 1/4 ounce sour cream,(1 tablespoon)

How to Make

  • Step 1: Whisk eggs, milk, and salt and pepper in a small bowl.

  • Step 2: Microwave chili for 30 seconds.

  • Step 3: On medium heat

  • Step 4: Spray a small skillet with non stick cooking spray.

  • Step 5: Add butter

  • Step 6: Add egg mixture to skillet.

  • Step 7: When egg is fully cooked add chili and cheese.

  • Step 8: Add onion and jalapeno

  • Step 9: Fold egg over.

  • Step 10: Cover

  • Step 11: Cook for a minute until cheese is melted

  • Step 12: Plate

  • Step 13: Top with tomato, cilantro and green onion
