Step 1: Basic Recipe ... Add the potatoes in a microwave dish large enough so you can spread out the potatoes a bit. You just don't want them piled up on top of one another. Add the water and cover with plastic wrap. If you are someone who doesn't like to use plastic wrap in the microwave, use a damp paper towel or a microwave dish with a cover.
Step 2: Cook ... Five (5) minutes, stir and test to see if they are fork tender. If not, cook another 2-3 minutes. Once they are done, drain any extra water.
Step 3: Flavor ... I normally will add in the butter, broth or cream, salt and pepper. Mix well. NOTE: if you are adding cheese or a lot of additional ingredients, you may want to pop it back in the microwave for another minute to heat everything through. Normally, if just adding some cream or broth it is not necessary.
Step 4: This is the basic recipe, but feel free to make it yours. You may be trying to cut fat and calories, so just add broth, salt and pepper. Or go all out and add whatever you like. What is so nice that making a small amount, you can really make them different every time.
