  • 1 tablespoons olive oil
  • 2 pounds chicken thighs
  • 1 cup onion, chopped
  • 1 stalk celery, chopped
  • 2 carrot's, chopped
  • 3 green onions, minced
  • 2 cloves garlic, smashed
  • 1 cup tomatoes, chopped
  • 1 cup orange juice
  • 1 teaspoon orange zest
  • 1 teaspoon ginger, minced
  • 1/2 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon paprika
  • ½ teaspoon chili powder
  • ½ teaspoon pepper
  • ½ teaspoon cinnamon
  • ¼ teaspoon turmeric
  • 1 teaspoon salt
  • 1/8 teaspoon ground cloves
  • 1/8 teaspoon nutmeg
  • 1 bay leaf
  • 6 cups chicken broth
  • 1 can (15 ounces) garbanzo beans , drained
  • 4 ounces dry white rice,(1/2 cup)

  • Step 1: Heat oil

  • Step 2: Saute onions and garlic

  • Step 3: Add chicken

  • Step 4: Add spices

  • Step 6: Simmer 2 hours

  • Step 8: Bone and skin it

  • Step 9: Add back into soup

  • Step 10: Remove bay leaf
