Ingredients

The ingredients are:
  • 4 ounces thick-cut bacon , diced ,(4 slices)
  • 2 tablespoons bacon grease,( lard)
  • 2 cups yellow onion , finely chopped
  • 1/2 cup green bell pepper , seeded and finely chopped
  • 2 cloves garlic, minced
  • 1 cup tomato , finely diced
  • 1 1/2 pounds stewing beef , cut into 1/2 inch pieces
  • 1 tablespoons paprika
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon freshly ground black pepper
  • 8 ounces smoked sausage
  • 1 teaspoon caraway seeds , coarsely crushed,to taste
  • 1 bay leaf
  • 2 cups water

How to Make

  • Step 1: In Dutch oven

  • Step 2: Fry the bacon until done

  • Step 3: Remove

  • Step 4: Add the onions and cook over medium-high heat until golden.

  • Step 5: Add the bell peppers and garlic and cook for another two minutes.

  • Step 6: Add the beef and cook for a minute until some, but not all, of the pink is gone.

  • Step 7: Stir in the paprika and remove from heat.

  • Step 8: Add the remaining ingredients.

  • Step 9: Add just enough water to come up to just over the halfway point of the stew mixture (your braising it). Return to heat and bring it to a boil.

  • Step 10: Cover, reduce the heat to medium-low and simmer for 90 minutes. (Adding water as needed)

  • Step 11: If the stew isn't thick enough, continue to simmer uncovered for a few more minutes so that some of the liquid evaporates.

  • Step 12: Add chopped bacon back in

  • Step 13: Add salt and pepper to taste.

  • Step 14: Remove bay leaf

  • Step 15: And sausage cut sausage into coins to serven
