  • 4 ounces dry rigatoni ,cooked al dente, drained ,rinsed
  • 1 clove garlic, smashed
  • 1/2 cup red bell pepper, chopped
  • 1 jar(8 ounces )artichoke hearts, drained ,chopped
  • 1/2 cup black olives, cut in half
  • 3 tablespoons red onion, minced
  • 1 carrot, grated
  • 1 cup tomato, diced
  • 1/2 teaspoon dry oregano
  • 1/2 teaspoon dried basil
  • 6 ounces mozzarella cheese, cubed
  • 1 ounce parmesan cheese, grated
  • 1 cup italian dressing,more if needed
