Ingredients

The ingredients are:
  • RIBS
  • 3 pounds pork back ribs
  • 1 1/2 teaspoons salt
  • 1 teaspoon pepper
  • 2 tablespoons oil (vegetable oil)
  • SAUCE
  • 10 allspice berries
  • 2 or 3 (3 inches) cinnamon sticks
  • 10 fresh ginger slices (the size of a nickel, peeled you can also substitute 1 tablespoon ground ginger)
  • 5 dried red chilies (1 teaspoon cayenne pepper can be substituted)
  • 5 cloves garlic, lightly smashed
  • 1 bottle (12 ounce) beer (dark beer like Guinness or any porter, dark beer is really needed for this recipe)

How to Make

  • Step 1: Ribs ... I like to remove the membrane from the back (or bottom) of the ribs, but it isn't necessary. It pulls off pretty easily. You need to cut the rack into 2 or 3 pieces so they fit in a saute pan - these need to be browned. You may have to brown them in batches.

  • Step 2: Brown ... Add the oil to your saute pan and bring to medium high heat. Brown the ribs on each side until lightly golden brown. Transfer if necessary to an oven proof pan.

  • Step 3: Bake ... Preheat the oven to 300 degrees. While the oven preheats, add the allspice berries, cinnamon sticks (broken into 2-3 pieces each), ginger, chilies, garlic and beer to a small pot and bring to a boil. Then, pour the beer and spices to the pan with the ribs. Cook approximately 1 1/2-2 hours until the ribs and tender, but not falling apart.

  • Step 4: Broil ... Remove the ribs from the pan and transfer to a broiler pan (lined with foil). Season the top of the ribs with a little additional salt and pepper. Broil on each side until golden brown - just a couple of minutes per side. This step can also be done of the grill.
