  • Salad dressing:
  • 1 lemon, juiced
  • 3 cloves garlic,smashed
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 3/4 cup oil
  • Salad:
  • 8 ounces baby spinach
  • 1 head romaine lettuce,chopped
  • 2 cups cherry tomatoes,halved
  • 8 ounces swiss cheese,shredded ,(1 cup)
  • 2/3 cup slivered almonds,toasted
  • 2 ounces parmesan cheese,grated,(1/3 cup)
  • 1/4 teaspoon fresh coarsely ground pepper
  • 1/4 pound bacon ,diced ,cooked
  • 1 cup croutons

How to Make

  • Step 1: Make dressing at least 3 hours ahead of time

  • Step 2: Blender add everything but oil which you will SLOWLY add until gelled up

  • Step 3: Put in fridge

  • Step 4: Salad :

  • Step 5: Mix together

  • Step 6: Parmesan last then pepper to taste

  • Step 7: Add as much dressing as needed toss
