Ingredients

The ingredients are:
  • 1 1/2 cups lentils, dry
  • 1 onion, cut in half (medium onion)
  • 2 bay leaves
  • 2 whole cloves
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon black pepper
  • 1 pound potatoes (peeled and sliced into thick slices, about 4 or 5 potatoes)
  • 3 tablespoons olive oil (extra virgin olive oil, plus extra for drizzling)
  • 2 leeks (medium leeks, white and tender green parts, washed and chopped into 1/2 inch pieces)
  • 1 teaspoon chopped garlic
  • 1 rosemary sprig (large sprig thyme or rosemary sprig)
  • 2 tablespoons paprika (smoked sweet paprika, pimenton dulce)
  • 1/8 teaspoon cayenne, or to taste (ground)
  • 6 to 12 saffron strands (a small pinch, soaked in 1/4 cup cold water)
  • 1 cup tomatoes, chopped (canned tomatoes with juice)
  • 2 tablespoons sherry vinegar
  • 1 tablespoons chopped parsley (optional)
We recommend you get your ingredients ready before you start cooking. Once you're ready, here are the steps to making this delicious recipe

How to Make

  • Step 1: Rinse lentils. Put them into Dutch oven with 8 cups water. Pin a bay leaf to each onion half with a clove and add to pot. Add a large pinch of salt. Bring to a boil, then reduce heat to simmer. Cook with lid ajar for about 30 minutes or until soft. Turn off heat.

  • Step 2: Meanwhile, cook potato slices in another pot in boiling, salted water until almost done, about 10 minutes, then drain and spread out on baking sheet to cool. (NOTE: I just added potatoes to lentils for the last 10 minutes of cooking, and did not spread out to cool)

  • Step 3: Put 3 tablespoons olive oil in a large skillet over medium-high heat. Heat til shimmery, add leeks and stir to coat. Season with salt and pepper. Cook leeks briskly, stirring often until soft, but still bright green, about 5 minutes. Turn heat to medium, stir in chopped garlic, thyme, paprika and cayenne. (see note)

  • Step 4: Add saffron and the soaking water, chopped tomato with juice and vinegar to skillet. Turn heat to hight and let everything cook for a few minutes. Pour contents of skillet over lentils in Dutch oven. Add potatoes.

  • Step 5: Bring to a boil, then reduce to a simmer. Cook with lid ajar for about 10 minutes. Taste to adjust seasonings, then cook for 10 more minutes. Lentils will be soft and potatoes will start to break apart. Discard onion and thyme sprig.

  • Step 6: Finish with a drizzle of olive oil and chopped parsley, if desired.

  • Step 7: NOTE: if you don't have a sprig of thyme or rosemary, you can add 1/4 teaspoon of crushed thyme.
