Ingredients

The ingredients are:
  • 1/4 cup oil
  • 1 cup onions
  • 1/2 cup bell peppers
  • 1/2 cup celery
  • 8 ounces bacon, chunk
  • 2 cups water
  • 2 pounds red potatoes ,cut in half,(5 large )
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper, to taste
  • 1/2 teaspoon cayenne pepper,to taste
  • 1 teaspoons sassafras file powder, to taste

How to Make

  • Step 1: Boil salt meat (bacon)on the side for about 20 minutes;

  • Step 2: Then cut into small bite size pieces.

  • Step 3: While that's boiling

  • Step 4: Heat oil and saute onions, bell pepper, and celery for just about 5 minutes in a soup pot.

  • Step 5: Pour your salt pork meat with 2 cups of water.

  • Step 6: At this time you can add some salt, pepper, and cayenne pepper

  • Step 7: Let this boil for about 15 minutes.

  • Step 8: After about 15 minutes add in potatoes with 2 cups water

  • Step 9: Enough for the potatoes to be able to boil and add more salt and pepper.

  • Step 10: Cover it but not to tightly.

  • Step 11: After potatoes are boiled turn off heat and add sassafras file powder.
