Ingredients

The ingredients are:
  • Marinade:
  • 1/4 cup roasted garlic,smashed
  • 1/2 cup rice vinegar
  • 1/4 cup extra virgin olive oil
  • 1/4 cup oil
  • 2 tablespoons dried oregano
  • 2 tablespoons fresh rosemary
  • 1 lemon, thinly sliced
  • 1 teaspoon red pepper flakes
  • 2 tablespoons salt
  • 1 teaspoon coarse-ground black pepper
  • 1 tablespoon sugar
  • Chicken:
  • 4 pound whole chicken, halved,(spatchcocked)
  • 1/2 teaspoon salt
  • 1/2 teaspoon coarse-ground black pepper
We recommend you get your ingredients ready before you start cooking. Once you're ready, here are the steps to making this delicious recipe

How to Make

  • Step 1: Combine all the marinade ingredients in a bowl and mix well.

  • Step 2: Place the chicken halves in a large ziploc bag and pour the marinade over the top. marinate in the fridge overnight.(I would flip bag a coupla times)

  • Step 3: Next day:

  • Step 4: Fire up the grill

  • Step 5: Remove the chicken from the marinade (but don’t wipe the herbs off; they’re delicious charred right on the skin). Season with more salt and pepper to taste.

  • Step 6: Grill:

  • Step 7: Place the chickens skin-side down and grill them on high.

  • Step 8: After 2 minutes, turn the halves 45°. After another 2 minutes, flip the halves over. After another 2 minutes, turn the halves 45° again.

  • Step 9: Turn the heat down to medium and cook the chicken until the juice runs clear when you stick a leg with a knife, about 20 minutes, depending on your grill.
