  • 1 1/2 pounds boneless,skinless chicken breasts,cut into thin strips
  • 2 tablespoons margarine
  • 2 cups celery,cut diagonally
  • 2 cups onions,sliced
  • 2 cups fresh baby spinach,chopped
  • 1 can(15 ounces) mixed chinese vegetables,drained
  • 1 1/2 tablespoons cornstarch
  • 1 1/2 cups chicken broth
  • 1/4 cup soy sauce
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

How to Make

  • Step 1: Cook the chicken in the margarine (I might add a little oil here) until white

  • Step 2: Meanwhile stir the cornstarch into broth

  • Step 3: Add onions and celery to the chicken

  • Step 4: Cook just until crisp

  • Step 5: Add canned vegetables

  • Step 6: Add spinach

  • Step 7: Add broth

  • Step 8: Cook until thickened

  • Step 9: Add soy sauce

  • Step 10: Add seasonings to taste

  • Step 11: (Check saltiness before adding more)

  • Step 12: Serve over rice
