Ingredients

The ingredients are:
  • 8 egg yolks
  • 3 ounces finely ground unsalted pistachio nuts
  • 7 ounces sugar,(1 cup)
  • 26 ounces light cream,(3 cups )
  • 6 ounces heavy cream ,( 3/4 cup)
  • 1/8 teaspoon green food coloring,( 9 drops)
  • 2 tablespoons kirsch.

How to Make

  • Step 1: Mix pistachios, sugar and yolks.

  • Step 2: Bring half and half to boil;

  • Step 3: Pour into pistachio mixture.

  • Step 4: Stir over medium heat until mixture thickens.

  • Step 5: Do not boil.

  • Step 6: Strain (if you have no egg bits at the price of pistachios,I wouldn't)

  • Step 7: Cool.

  • Step 8: Add cream, coloring and kirsch

  • Step 9: Freeze in ice cream freezer according to machines instructions

  • Step 10: Or refrigerator freezer.
