Ingredients

The ingredients are:
  • 2 tablespoon olive oil
  • 1 tablespoon dried oregano
  • 1/3 cup fresh lemon juice
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon dried ground rosemary
  • 2 large garlic cloves, finely minced
  • 2 pounds pork tenderloin (fat removed, cut into 3/4 inch cubes)
  • 1 1/2 cups yogurt (plain, low or no fat is fine)
  • 1 jalapeno pepper, finely chopped
  • 1/2 cup green onions, chopped
  • 1/4 cup parsley, chopped
  • 1 large (7 ounce) tomato (seeded, diced)

How to Make

  • Step 1: Combine the oil, lemon juice, oregano, rosemary and garlic

  • Step 2: Place the pork in a zip lock bag or non metalic container and pour on the marinade- Place in fridge and marinate for 8 hours or overnight. Flip the bag a few times

  • Step 3: Combine the yogurt, jalapeno, green onion, parsley, and tomato. Place in the fridge ready to serve with the cooked meat

  • Step 4: Loosely skewer the meat, place skewers on a baking sheet, baste with the marinade, Bake in 400f for about 25 minutes depending on the size of the cubes of meat. Baste several times with the marinade

  • Step 5: Serve with rice or noodles. Place the meat on the rice and drizzle the yogurt sauce over the meat and rice or serve the sauce on the side.
