Goetta Omelet

  • The following recipe serves 2 people.

Ingredients

The ingredients are:
  • 4 ounces pork sausage (Goetta, either the kind in a loaf or tube)
  • 4 large eggs (beaten)
  • 3 ounces portabella mushrooms (sliced)
  • 2 ounces shredded cheddar cheese (or any favorite cheese, shredded)
  • 1/3 cup bell pepper (diced)
  • 1/3 cup onion, diced
  • 1 to 2 tablespoons butter
  • 1 teaspoon ground black pepper, or to taste
  • 1/2 teaspoon salt, or to taste
  • Hot sauce, optional, to taste

How to Make

  • Step 1: Heat a medium skillet on medium heat.

  • Step 2: Cut the Goetta into 1/2” patties. Add some of the butter to the skillet.

  • Step 3: Brown the Goetta thoroughly in the skillet, carefully turning over to brown the other side.

  • Step 4: Add mushrooms, bell pepper, onion, and black pepper. Sauté until vegs soften.

  • Step 5: Break up the browned Goetta in the skillet and mix with other ingredients.

  • Step 6: Remove Goetta and sautéed ingredients. Wrap in foil to keep warm or place in warm oven.

  • Step 7: Turn skillet down to medium-low. Add rest of butter to thoroughly coat skillet. Add salt to beaten eggs.

  • Step 8: Add beaten eggs to the skillet. Tilt until bottom is firm and top is somewhat firm. Add Goetta and ingredients.

  • Step 9: Spread evenly and add cheese.

  • Step 10: Turn off heat and cover skillet until cheese melts.

  • Step 11: Serve either folded like traditional omelet or open face.

  • Step 12: If desired, add some hot sauce. (This may not be "traditional"!)
