Ingredients

The ingredients are:
  • 1 tablespoon butter
  • 11/2 tablespoons flour
  • 8 ounces heavy cream,(1 cup)
  • 4 egg yolks
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup fresh asparagus tips
  • 4 egg whites,beaten stiff

How to Make

  • Step 1: Take one tablespoon butter and rub into it one and a half tablespoons flour and add one cupful cream [over low heat]. Cook until creamy and add the yolks of four eggs.

  • Step 2: Beat this mixture for five minutes and add salt and pepper to taste, the fold in one cup of asparagus tips, fresh asparagus preferred.

  • Step 3: [remove from heat].

  • Step 4: Then add the whites of four eggs, beaten stiff, [fold in] and put into a hot buttered (which you have put in oven while preheating)soufflé dish,

  • Step 5: Set the dish in a shallow pan of water and bake for thirty-five minutes in a moderate oven.

  • Step 6: (Dont open oven)

  • Step 7: (350 degrees)

  • Step 8: It will stand up and look beautiful. Before you take it out of the oven, grease with butter and serve at once.
