Ingredients

The ingredients are:
  • 1 tablespoon olive oil
  • 48 to 60 ounces skinless chicken thighs (seasoned to your preference, 8-10 chicken thighs)
  • 1 onion, large
  • 4 to 6 garlic cloves, minced
  • 4 teaspoons chili powder
  • 4 teaspoons unsweetened cocoa powder
  • 1/2 teaspoon cinnamon
  • 2 1/2 cups chicken stock (or chicken broth)
  • 2 tablespoons peanut butter (creamy)
  • 2 tablespoons tomato paste
  • 1/2 cup dark raisins
  • 4 cups cooked rice (brown)
  • 1/2 cup cilantro leaves (for garnish)
  • Lime wedges (for garnish)

How to Make

  • Step 1: Get out a large skillet and heat the one tablespoon olive oil. Brown all sides of the chicken. It may take several batches; approximately 10 minutes total.

  • Step 2: Lightly coat the bottom of your slow cooker with cooking spray. Put the chicken in the bottom of it. Discard all but one tablespoon of the pan drippings that was in the pan.

  • Step 3: In the same skillet that you cooked the chicken, heat the pan drippings. Cook your onion, stirring until they are softened.

  • Step 4: Next, add in the garlic, chili powder, cocoa powder, and cinnamon. Cook, stirring for 1 minute.

  • Step 5: Add the broth, peanut butter, and tomato paste, stirring it in.

  • Step 6: When it is finished, pour it over the chicken that is already in the slow cooker.

  • Step 7: It should be cooked on low setting for 4 to 5 hours, or until a thermometer reads 165° Fahrenheit.

  • Step 8: Serve the chicken over the cooked Brown rice. If desired, top with cilantro and lime wedges for garnish
