Ingredients

The ingredients are:
  • 200 gram dry vermicelli noodles
  • 1/4 cup oil (peanut oil)
  • 500 grams boneless chicken ( sliced into stir-fry strips)
  • 1 red capsicum, seeded and sliced
  • 1 red onion, thinly sliced
  • 4 spring onions, sliced
  • 1 bunch broccolini, cut into 3cm pieces
  • 2 long red chillies, sliced
  • 1/2 cup salted cashew nuts
  • 1 cup Thai basil leaves
  • 1 cup coriander sprigs
  • FOR LIME CHILLI SAUCE
  • 1/3 cup lime juice
  • 1/4 cup sweet chilli sauce
  • 2 tablespoons fish sauce
  • 1 tablespoon sugar (palm sugar, or brown sugar)

How to Make

  • Step 1: In a saucepan of boiling water, cook noodles for 2 minutes following packet directions and then drain and keep warm.

  • Step 2: In a wok or large frying pan, heat half the oil on high and stir-fry chicken in three batches for 2-3 minutes each until golden and set aside.

  • Step 3: In the same wok, heat remaining oil on high and stir-fry capsicum, onions, broccolini and chilli for 1-2 minutes.

  • Step 4: For the lime chilli sauce: In a jug, whisk all the ingredients together.

  • Step 5: Toss chicken, cashews, sauce and half the herbs with the vegetables and stir-fry for 1-2 minutes until hot.

  • Step 6: Spoon on top of noodles and serve sprinkled with remaining basil and coriander.
