Ingredients

The ingredients are:
  • FOR DRESSING
  • 1/4 cup oil (use a neutral oil. I used a light olive oil)
  • 1 - 2 tablespoons lemon juice (to taste)
  • 3-4 tablespoons rice wine vinegar (optional, however, I feel like it needs it to add a bit more tart an an extra layer of flavor)
  • 1/2 teaspoon grated orange peel
  • 2 tablespoons orange juice
  • 1 tablespoon sugar
  • 1/4 teaspoon salt or to taste
  • 1/4 teaspoon dry mustard
  • FOR SALAD
  • 1 orange, pared and sectioned
  • 1 cucumber, sliced
  • 1 small onion, sliced
  • Lettuce, of choice (optional)

How to Make

  • Step 1: Combine all dressing ingredients. Place in a jar and shake, store in the refrigerator until ready to use. Makes about 1/2 cup of dressing.

  • Step 2: Add all the salad ingredients (orange - onion) in a bowl. Pour dressing over all and marinate in refrigerator for 1-2 hours. Remove with slotted spoon; serve on lettuce of choice, if you prefer.
