Ingredients

The ingredients are:
  • 3 cups chicken stock (or chicken broth)
  • 1/2 cup carrots, chopped
  • 1 cup dry pastina (star-shaped pastina, or other tiny pasta shapes)
  • 5 ounces cooked chicken (diced, (this is about 1 cup)
  • 1/3 cup shredded mozzarella cheese
  • Parmesan-Reggiano cheese

How to Make

  • Step 1: In a saucepan over medium heat add the broth and carrots and bring to a boil

  • Step 2: Stir in pasta and cook for 5-10 minutes or until tender. During the last minute or so add the chicken to heat throughly.

  • Step 3: Remove from heat and stir in mozzarella. Laddle into bowls and serve hot sprinkled with grated Parmesan-Reggiano or on the side.
