Ingredients

The ingredients are:
  • 8 ounces angel hair pasta
  • 1 tablespoon olive oil
  • 2 tablespoon butter, divided
  • 6 to 8 ounces salmon fillets
  • 1 teaspoons salt (or to taste)
  • 1 teaspoon black pepper (or to taste)
  • 10 spears fresh asparagus, cut into 1½-inch strips
  • 1 lemon, zested and juiced (amt is approx. - you might not use all of the juice or zest)
  • 1/4 cup parmesan cheese, freshly shredded (use fresh, not the dry pre-grated stuff in a can)
  • 2 tablespoons fresh chives, finely cut (optional)

How to Make

  • Step 1: Prepare pasta as directed on package. Once cooked, drain in colander. While still hot, add 1 Tbsp butter and 1/2 Tbsp lemon juice to the hot pasta, and toss gently to allow melted butter to coat the pasta. Set pasta aside.

  • Step 2: While pasta is cooking, heat olive oil and remaining 1 Tbsp butter in a large skillet.

  • Step 3: Season the salmon pieces with salt and pepper, then cut (or separate) salmon into bit-size pieces. Add salmon pieces to skillet, and sauté for 3 to 4 minutes each side, set salmon aside.

  • Step 4: Add asparagus strips to the skillet, and sauté for 4 to 5 minutes or until softened.

  • Step 5: Add drained pasta and cooked salmon to the skillet, and gently toss until well combined.

  • Step 6: Remove skillet from heat. Add parmesan cheese to the pasta mixture, and toss gently until well incorporated. Season with additional salt and pepper, if desired.

  • Step 7: Divide the pasta mixture among 4 pasta bowls or 4 serving dishes with rimmed edges. Garnish the top of each serving with chives and lemon zest, and serve immediately. SERVING SUGGESTION: It’s great served with warm garlic bread or cheese bread!
