Ingredients

The ingredients are:
  • 375 grams filo pastry sheets
  • 300 grams frozen spinach
  • 125 grams low-fat fetta crumbled
  • 250 grams low-fat fresh ricotta
  • 1 tablespoons parmesan
  • 2 eggs, lightly beaten
  • 1 teaspoon nutmeg
  • 1 tsp oregano
  • 1 pinch seasoning *to taste
  • 1/4 cup butter, melted
  • 1/4 cup sesame seeds optional *to decorate

How to Make

  • Step 1: Defrost frozen spinach in microwave and squeeze out excess moisture using hands or sieve and place in a mixing bowl.

  • Step 2: Add eggs, crumbled feta, ricotta, parmesan, nutmeg, oregano and salt and pepper to mixing bowl and mix well to combine.

  • Step 3: Lay out one sheet of filo pastry and brush with melted butter or spray with oil spray and then lay another sheet of filo pastry on top.

  • Step 4: Using scissors, cut pastry into three equal long strips.

  • Step 5: Put a tablespoonful of mixture at the bottom of a pastry strip and fold the pastry across into a triangle.

  • Step 6: Keep folding the triangle-shaped filling up the strip until it is used up and then brush on extra butter to stick down the end, if required.

  • Step 7: Place the triangles on an oven tray that has been sprayed with oil or covered with baking paper and brush the top of the triangles with butter and sprinkle with poppy or sesame seeds, if desired.

  • Step 8: Bake at 190C for 20-25 minutes until pastry is crisp and slightly browned.

  • Step 9: Serve warm with salad.
