Ingredients

The ingredients are:
  • FOR DRESSING
  • 1/2 cup blackberry jam (seedless, or preserves)
  • 1/4 cup balsamic vinegar
  • 1 tablespoon olive oil (extra virgin olive oil, plus more for drizzling)
  • FOR SALAD
  • 1 pound cantaloupe (1 small)
  • 1 1/2 pound melon (honeydew melon, 1 small)
  • 1/2 pound radish (1 bunch small radish)
  • 3 ounces peppermint (1 large bunch)
  • 8 ounces mozzarella cheese (small, fresh mozzarella balls ciliegine size)
  • 1 pint blackberries (fresh)

How to Make

  • Step 1: Make the dressing by whisking together all the ingredients. Season with salt and pepper to taste. Set aside.

  • Step 2: Using a melon baller, scoop the flesh from the two melons into a large bowl. Slice the radishes into thin rounds and add to the bowl. Tear the mint leaves from the stems and add to the bowl. Add the mozzarella and blackberries to the bowl. Toss.

  • Step 3: Arrange the salad on a serving plate. Drizzle with olive oil and sprinkle with coarse kosher salt. Serve the dressing on the side.
