Step 1: To cook the orange syrup, place the sugar, orange zest and juice in a small saucepan with 2 tablespoons water over medium heat and cook, swirling pan for 6-8 minutes until sugar has dissolved and then let stand at room temperature until ready to use.
Step 2: Whisk the eggs, milk, spices, lemon zest in a bowl and working with 2 slices of read at a time, dip into the mixture, turning once, to lightly soak.
Step 3: Heat some butter in a large non-stick frypan over medium-high heat and working in batches, cook the bread for 2-3 minutes on each side until golden brown and cooked through and then keep warm while you cook the remaining slices.
Step 4: Divide the toast among plates and top each with ricotta and cherries and spoon over a generous amount of orange syrup and scatter with pistachios and serve immediately.
