Ingredients

The ingredients are:
  • 1 (3 1/2 pound) whole chicken (whole or parts with skin on )
  • Salt and pepper , to taste
  • 6 cups chicken stock
  • 1 onion
  • 1 small garlic head , outer layer of skin removed, top trimmed off
  • 1 bay leaf
  • 1 rib celery
  • 2 cups carrots , cut into pieces (about 2 large carrots)
  • 4 cups potatoes , cut into wedges (about 4 small potatoes)
  • 10 ounces chorizo sausages (Spanish, not Mexican chorizo)
  • 30 ounces garbanzo beans (drained, two 15 oz. cans chickpeas)
  • FOR SAUCE
  • 1 cup chopped flat-leaf parsley
  • 2 tomatoes (under-ripe tomatoes , peeled, chopped)
  • 1/4 cup onion, minced
  • 3 cloves garlic , crushed and minced, or grated
  • 3 tablespoons red wine vinegar
  • 1/4 cup olive oil
  • Salt and pepper , to taste

How to Make

  • Step 1: Season the chicken with salt and pepper and let stand 30 minutes at room temperature.

  • Step 2: Put chicken in a large pot and add the stock and enough water to cover it.

  • Step 3: Add the onion, garlic, bay leaf, celery, and bring to a boil.

  • Step 4: Skim any foam that appears off the top, cover the pot, and simmer for 10 minutes. Add the carrots and potatoes and simmer for an additional 15 minutes.

  • Step 5: Meanwhile, in a pot of boiling water, cook the chorizo sausages for a couple of minutes and drain them. Add the sausages and chickpeas to the pot with the chicken. Cover and continue simmering until the chicken is cooked through, about 20 minutes.

  • Step 6: The sauce:

  • Step 7: In a food processor, process the parsley, tomatoes, and 1/3 cup of the chicken cooking liquid, until the tomatoes are crushed but not pureed.

  • Step 8: Transfer the mixture to a bowl. Add the onion, garlic, vinegar, olive oil, and whisk. Season with salt and pepper to taste.

  • Step 9: Serve the meats, veggies, and chickpeas in one bowl swimming in the cooking liquid. Add parsley sauce to taste.
