Step 1: Place the garlic, chillies, sherry and sugar in a bowl and mix well until the sugar dissolves. Add the oil and scallops and toss together, leave to marinate for at least 30 minutes; toss lightly once or twice more during this time to coat all the scallops.
Step 2: Using a slotted spoon, transfer the scallops to a plate, and reserve the marinade.
Step 3: Heat a little olive oil in a non stick fry pan and cook the scallops over a high heat for 1 minute (only) on each side. Remove the scallops from the pan and pour in the marinade. Cook the marinade over a high heat for 3 minutes; remove the marinade from the heat and pour over the scallops.
Step 4: Serve immediately with a crisp green salad if desired.
