Ingredients

The ingredients are:
  • 4 garlic cloves, garlic
  • 50 grams red chillies (mild to medium, de seeded and finely chopped, 3 fresh chilli needed)
  • 3 tablespoons dry sherry
  • 1 teaspoon caster sugar
  • 2 tablespoon olive oil (plus a little extra for frying)
  • 1/2 kilo scallops (fresh large size, 12 scallops)

How to Make

  • Step 1: Place the garlic, chillies, sherry and sugar in a bowl and mix well until the sugar dissolves. Add the oil and scallops and toss together, leave to marinate for at least 30 minutes; toss lightly once or twice more during this time to coat all the scallops.

  • Step 2: Using a slotted spoon, transfer the scallops to a plate, and reserve the marinade.

  • Step 3: Heat a little olive oil in a non stick fry pan and cook the scallops over a high heat for 1 minute (only) on each side. Remove the scallops from the pan and pour in the marinade. Cook the marinade over a high heat for 3 minutes; remove the marinade from the heat and pour over the scallops.

  • Step 4: Serve immediately with a crisp green salad if desired.
