Step 1: Combine Burger Seasoning ingredients and set aside.
Step 2: Place mushrooms in the bowl of the food processor and pulse on and off until mushrooms are finely chopped but not powdery.
Step 3: Heat olive oil in a 10" non-stick skillet over medium-high heat.
Step 4: Add mushrooms and onions; cook and stir until mushrooms are tender and start to brown a bit, about 5 minutes; they should appear dry and crumbly, not wet.
Step 5: Remove from heat and let cool.
Step 6: In a large bowl, combine beef, mushrooms, parsley and burger seasoning.
Step 7: Mix using your hands until all ingredients are well blended.
Step 8: Shape ground beef mixture into 4 patties and cover with plastic wrap and refrigerate for 1 hour.
Step 9: Preheat grill to medium-high and lightly oil grill racks.
Step 10: Grill burgers for about 5 minutes per side, or until cooked to your desired degree of doneness.
Step 11: During the last minute of cooking time, baste with barbecue sauce, if using.
Step 12: Serve immediately with buns or without, topped with your favvy burger garnishes.
