Ingredients

The ingredients are:
  • 1/2 pound bulk pork sausage (mild or spicy)
  • 3 garlic cloves, minced
  • 12 large eggs
  • 1/2 medium onion, finely chopped (about 1/2 cup or 1 large green onion, finely chopped)
  • 1/3 cup chopped green bell pepper
  • 1/2 teaspoon seasoned salt
  • 1/2 teaspoon fresh ground black pepper, or to taste
  • 1/2 cup shredded cheddar cheese

How to Make

  • Step 1: Preheat oven to 350 degrees F. Set oven rack to second-lowest position. Generously grease 12 regular-size muffin cups.

  • Step 2: In a skillet cook the sausage meat with garlic until browned; drain fat. In a large bowl whisk the eggs, then add in onion, bell pepper, salt and black pepper. Stir in the cooked sausage and shredded cheese.

  • Step 3: Spoon about 1/3 cup of the egg/sausage mixture into each greased muffin tin. Bake for about 22-25 minutes or until just set.
