Ingredients

The ingredients are:
  • 2 acorn squash (about 1 pound each or total of 2 pounds)
  • 3 tablespoons butter
  • 1 onions, chopped
  • 2 cloves garlic, minced
  • 1 pound ground pork sausage (like Jimmy Deans sausage)
  • 1 apple, cored and diced
  • 2 cups spinach, chopped
  • 2 teaspoons thyme, fresh and chopped
  • Salt
  • Pepper
  • 1/2 cup feta cheese

How to Make

  • Step 1: Preheat oven to 375 degrees F.

  • Step 2: Line a cookie sheet with parchment paper.

  • Step 3: Cut squash in half lengthwise and remove and discard seeds. Place squash halves, cut side down on paper-lined cookie sheet and roast for 20-30 minute or until skin is tender. Remove from oven and turn squash over -- so open side is up.

  • Step 4: In a skillet on medium high heat, add 1 tablespoon butter and the onions and cook for 5 minutes. Add another tablespoon of butter and the apples and cook another 5 minutes. Add some water when or if onions stick to pan. Set aside.

  • Step 5: In same skillet over medium low heat add 1 tablespoon of butter and the garlic and cook for a minute or two or until garlic is tender. Stir in sausage and increase heat to medium and cook, stirring to break up sausage for 5-10 minute or until browned. Stir in herbs and cook for another minute or two. Stir in spinach and cook until it wilts. Sprinkle with salt and pepper.

  • Step 6: Stir reserved onions to sausage mixture. Preheat broiler and arrange squash halves on cookie sheet. Fill the four squash halves with sausage mixture and sprinkle with the feta cheese. Put under the broiler for 2 minute our until tops ar e brown and crispy. Serve squash with any leftover sausage mixture.
