Ingredients

The ingredients are:
  • 3 baby cos lettuce, leaves separated and torn
  • 1 bunch rocket, trimmed
  • 1 avocado, large
  • 1/2 red onion, medium thinly sliced
  • 1/2 cup mint leaves, small fresh
  • 1/2 cup coriander leaves, small fresh
  • 1 large mango, large and
  • 120 grams raspberries, fresh
  • 450 grams lobster tails, meat removed and sliced (2 cooked tails)
  • 1/4 cup lemon juice
  • 2 tablespoons olive oil
  • 2 teaspoons Dijon mustard
  • Pinch caster sugar

How to Make

  • Step 1: Arrange lettuce and rocket on a platter.

  • Step 2: Cut avocado in half and remove the stone and peel and slice and arrange over salad with onion, mint, coriander, mango slices and raspberries and top with lobster meat.

  • Step 3: Whisk juice, oil, mustard and sugar together in a small bowl until combined or put the ingredients into a jar and screw on the lid and shake and then drizzle dressing over salad and serve.

  • Step 4: NOTE: If rocket is unavailable in bunches use 30 grams baby rocket leaves.
