Ingredients

The ingredients are:
  • 2 cups lentils (rinsed, brown lentils)
  • 4 cups water
  • 1/2 cup olive oil
  • 1 red onion (chopped)
  • 4 garlic cloves (minced)
  • 2 teaspoons cumin
  • 1 lemon
  • 1/2 cup parsley (minced)
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tomatoes (seeded and diced)
  • Black olives (10 olives)
  • 1/2 cup feta cheese
  • 1/2 cup cucumber (seeded & diced)

How to Make

  • Step 1: Cook lentils over medium heat simmer covered 20-30 minutes, Do not overcook, drain and rinse with cold water, cool in refrigerator.

  • Step 2: Heat olive oil in skillet over medium heat, add onion cook until translucent, add garlic & cumin and cook another minute.

  • Step 3: Place lentils in a large bowl, add onions, cumin & stir in lemon juice, parsley, salt and pepper.

  • Step 4: Cool 30 minutes while spices meld.

  • Step 5: Garnish as you wish; i.e. tomatoes, cucumber, etc.

  • Step 6: Serve on a bed of lettuce sprinkle with feta cheese.
