Step 1: Cook lentils over medium heat simmer covered 20-30 minutes, Do not overcook, drain and rinse with cold water, cool in refrigerator.
Step 2: Heat olive oil in skillet over medium heat, add onion cook until translucent, add garlic & cumin and cook another minute.
Step 3: Place lentils in a large bowl, add onions, cumin & stir in lemon juice, parsley, salt and pepper.
Step 4: Cool 30 minutes while spices meld.
Step 5: Garnish as you wish; i.e. tomatoes, cucumber, etc.
Step 6: Serve on a bed of lettuce sprinkle with feta cheese.
