Ingredients

The ingredients are:
  • 2 ounce bread bun (1 hamburger bun with sesame seeds, cut into small cubes)
  • 2 teaspoon oil (canola)
  • 1/2 pound ground beef
  • 4 tablespoons unsalted butter
  • 1 large onion, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1/4 cup flour
  • 1/4 teaspoon salt
  • 4 cups beef stock (or chicken stock)
  • 2 potatoes, diced (medium yellow potatoes, peeled)
  • 1 1/2 cups shredded cheddar cheese
  • 2 tablespoons chopped chives
  • 2 tablespoons pickles, chopped (spears)

How to Make

  • Step 1: To make croutons, preheat oven to 375°F. Toss hamburger bun cubes with oil, then bake until lightly brown and crisp, about 10 minutes. Set aside.

  • Step 2: In Dutch oven set over medium-high heat, cook beef until fat has rendered and beef has started to brown, about 8 minutes (safe internal temp. 160°F). Transfer to plate and set a said. Melt butter in Dutch oven, and add onion and celery. Cook, stirring occasionally, until vegetables have softened about 10 minutes. Add the garlic, flour and salt, and cook until the flour is no longer raw, about 1 minute. Add stock in slow stream, whisking to blend with flour. Add potatoes, and return browned beef to pot. Bring to a simmer and cook on low, covered, until potatoes are tender, about 10 minutes.

  • Step 3: Stir in cheese. Ladle into serving bowls, with hamburger bun croutons on top, and garnish with chives and pickles. Enjoy, refrigerating any leftovers.
