Ingredients

The ingredients are:
  • 1 cup flour (King Arthur Pastry Flour, 113g Blend OR 1 cup 120g King Arthur Unbleached All-Purpose Flour)
  • 1/4 teaspoon salt
  • 1 tablespoon sugar (11g)
  • 4 tablespoons unsalted butter (cold, 57g)
  • 2 tablespoons shortening (vegetable shortening, cold, 21g)
  • 2 to 3 tablespoons water, iced (28g to 43g)
  • FOR FILLING
  • 4 large eggs
  • 1/2 cup packed brown sugar (106g)
  • 1/2 teaspoon salt
  • 1 1/2 cups maple syrup (cooking Maple Syrup (grade B, 468g)
  • 4 tablespoons unsalted butter (melted, 57g)
  • 1/4 teaspoon maple extract
  • 170 grams pecan halves (or 1 1/2 chopped pecans, or substitute chopped walnuts, 1 1/2 cups pecan halves)

How to Make

  • Step 1: CRUST: In a medium size mixing bowl, whisk together the flour, salt and sugar.

  • Step 2: Using a pastry blender, pastry fork, your fingers or a mixer, cut in the butter and shortening, making pea-sized crumbs.

  • Step 3: Sprinkle the crumbs with enough ice water to get it to the right consistency. Squeeze the dough into a ball, wrap with plastic wrap, and chill at least 1 hour.

  • Step 4: Preheat the oven to 400 degrees F.

  • Step 5: Roll the pastry into a 12" circle, and place it in a 9" pie plate.

  • Step 6: Crimp the edges, and chill the crust while you're preparing the filling.

  • Step 8: FILLING: In a medium-sized mixing bowl, whisk together the eggs, sugar, salt, maple syrup, melted butter and maple flavor.

  • Step 9: Stir in the nuts, and pour the filling into the prepared crust.

  • Step 10: Bake the pie on the bottom rack of the preheated oven for 15 minutes.

  • Step 11: Lower the oven temperature to 350 degrees F, and bake for an additional 25-35 minutes, or until the center is set.

  • Step 12: Remove from oven.

  • Step 13: Refrigerate up to 5 days.
