Ingredients

The ingredients are:
  • 2 cups vegetable broth ( no-salt-added vegetable broth, Kitchen Basics brand is recommended)
  • 1 can (15 ounce) crushed tomatoes
  • 3/4 cup dry green lentils (cleaned)
  • 1 medium red bell pepper, diced
  • 1 small sweet onion, chopped
  • 2 to 3 garlic cloves, pressed
  • 2 tablespoons chili powder (no-salt-added chili powder, Frontier brand is recommended)
  • 1/2 teaspoon cayenne
  • 1/2 teaspoon cumin
  • 1/4 teaspoon allspice
  • 1/8 teaspoon arbol dried chile
  • 1 can (15 ounce) tomato sauce
  • 1 1/2 cups whole kernel corn (half 16-ounce package)

How to Make

  • Step 1: Combine everything except tomato sauce and corn in 2 1/2 quart pot and boil over high heat, then reduce to low, cover, and simmer for 30 minutes.

  • Step 2: Stir in tomato sauce and corn and simmer for 15 minutes.
