Ingredients

The ingredients are:
  • 330 grams white chocolate Tim Tams (2 x 165 gram packets)
  • 1/3 cup desiccated coconut
  • 100 grams butter, melted and cooled
  • 395 gram sweetened condensed milk
  • 1/2 cup lemon juice
  • 2 teaspoons gelatine powder
  • 2/3 cup boiling water
  • 1/4 cup bright sprinkles, plus extra to decorate
  • JELLY TOPPING:-
  • 85 gram packet creaming soda jelly crystals
  • 1 cup boiling water
  • 1/2 cup cold water

How to Make

  • Step 1: Grease an 18cm x 28cm slice pan. Line base and sides with baking paper, extending paper 2cm above edges of pan.

  • Step 2: Place biscuits and coconut in a food processor and process until fine crumbs and then add butter and process until combined and then press mixture evenly over base of prepared pan and refrigerate for 10 minutes.

  • Step 3: Whisk condensed milk and lemon juice together in a bowl.

  • Step 4: Sprinkle gelatine over boiling water and whisk with a fork to dissolve and let stand for 2 minutes and gradually whisk into milk mixture until combined and stand for 3 to 4 minutes to cool and now fold in sprinkles and pour over prepared base and refrigerate for 2 hours or until set.

  • Step 5: Meanwhile, place jelly crystals into a heatproof jug and add boiling water and stir until crystals have dissolved.

  • Step 6: Stir in cold water and set aside for 1 hour to cool to room temperature.

  • Step 7: Gently pour jelly over slice and refrigerate for at least 3 hours or until set.

  • Step 8: Carefully remove slice from pan and cut into pieces and decorate with extra sprinkles and serve.
