Ingredients

The ingredients are:
  • 2 teaspoons olive oil
  • 1 kilogram beef mince
  • 60 grams salt-reduced spice mix for tacos (2 x 30 gram packets)
  • 600 grams salsa (2 x 300 gram jars chunky mild tomato salsa specified)
  • 2 tablespoons chipotle peppers in adobo sauce
  • 400 grams black beans, rinsed and drained
  • 300 grams corn kernels, drained
  • 250 grams microwave rice medley, warmed
  • 300 grams creamed corn, 1 can
  • 100 grams cheddar cheese (1 cup pre-grated pizza cheese specified)
  • 1/2 cup coriander sprigs, loosely packed fresh
  • 100 grams feta, crumbled
  • 1 avocado, sliced
  • 1 lime, cut into wedges

How to Make

  • Step 1: COOK THE BEEF Preheat a grill/broiler on high. Heat the oil in a large deep ovenproof frying pan over high heat and add beef and spice mix and cook, stirring with a wooden spoon to break up any lumps, for 3 minutes or until browned.

  • Step 2: ADD THE SAUCE Add salsa, chipotle, beans, corn kernels and 100 ml water and cook, stirring, for 3 minutes or until thickened slightly and then stir in rice and season. Smooth surface and spoon creamed corn over top and sprinkle with cheese.

  • Step 3: MELT & SERVE Cook under the grill/broiler for 2-3 minutes or until cheese is golden and then top with coriander, feta and avocado and season and serve with lime wedges.
