Ingredients

The ingredients are:
  • 1/4 cup water, warm
  • 1 tablespoon tamarind (pulp)
  • 1 teaspoon oil
  • 2 garlic cloves, minced
  • 2 pounds pineapple (1/2 fresh pineapple, cored and thinly sliced or 14 ounce can sugar-free pineapple chunks)
  • 1 teaspoon sugar
  • 4 cups water
  • 1/2 pound shrimp (medium shelled and deveined, about 10 shrimp or 1/2 pound chicken breast, cubed)
  • 1 tomato, cut into 8 pieces
  • 2 tablespoons fish sauce (or 1/2 teaspoon salt)
  • FOR GARNISH
  • 1 scallion, sliced
  • 5 sprigs cilantro
  • 1 red chile pepper, thinly sliced

How to Make

  • Step 1: In a small bowl, mix warm water and tamarind pulp.

  • Step 2: Mash tamarind with a small spoon to extract as much tamarind juice as possible. Set aside.

  • Step 3: In a small soup pot, heat oil and saute minced garlic until brown.

  • Step 4: Stir in pineapple and sugar.

  • Step 5: Add 4 cups water and bring to a boil.

  • Step 6: Add tamarind mixture, shrimp or chicken, tomato, and fish sauce or salt. Skim off foam and simmer for 5 minutes.

  • Step 7: Garnish with scallions, cilantro, and sliced red chile pepper.
