Ingredients

The ingredients are:
  • 1 pound fresh asparagus (about 15 stalks)
  • 3/4 cup warm water
  • 1 tablespoon tamarind pulp
  • 1 teaspoon cornstarch
  • 2 tablespoons sugar
  • 2 tablespoons fish sauce
  • 1 tablespoon oil
  • 1 garlic clove, finely minced
  • 2 scallions, cut into 1-inch lengths
  • 1 tablespoon roasted unsalted sesame seeds

How to Make

  • Step 1: Thoroughly wash and trim the asparagus and cut into 2-inch pieces.

  • Step 2: In a medium saucepan, bring water to a boil and blanch asparagus for 3 minutes.

  • Step 3: In a colander, quickly rinse asparagus under cold running water and drain thoroughly.

  • Step 4: In a small bowl, mix warm water and tamarind pulp.

  • Step 5: Mash tamarind with a small spoon to extract as much of the juice as possible.

  • Step 6: Add cornstarch and sugar to tamarind juice and mix. Set aside.

  • Step 7: Heat oil in a nonstick skillet and saute the garlic and scallion until fragrant. Stir in asparagus for 2 minutes. Pour in tamarind mixture and fish sauce and toss all ingredients well over low heat until all vegetables are well coated.

  • Step 8: Sprinkle with sesame seeds and serve warm.
