Ingredients

The ingredients are:
  • 1 (3 pound) whole chicken (broiler-fryer chicken, cut up)
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup butter
  • 8 ounces onion, diced fine (= 1 medium yellow onion)
  • 6 ounces green bell pepper (diced fine = 1 medium bell pepper)
  • 1 clove garlic, crushed
  • 1/2 teaspoon dried thyme
  • 1 1/2 teaspoons curry powder
  • 1 pound tomatoes, cut up (1 can whole tomatoes)
  • 3 tablespoons currants

How to Make

  • Step 1: Add salt and pepper to flour and mix well.

  • Step 2: Coat chicken pieces with seasoned flour.

  • Step 3: Brown chicken in the butter in skillet; remove.

  • Step 4: Add the onion, pepper, garlic, curry, and thyme to the skillet and stir while on low heat.

  • Step 5: Add tomatoes.

  • Step 6: Bake chicken with the sauce, uncovered, in a 350' F. oven for 30 minutes or till tender.

  • Step 7: Add currants 5 minutes before the chicken is done. The sauce may need thinning with water or stock while baking.
