Step 1: Heat a large saucepan, with a tight fitting lid over a medium heat and saute the onion, garlic and chilli for a few minutes until tender but not coloured and then add the jar of pasta sauce and bring to a boil and then lower temperature before adding the mussels and fit the pan with a lid and shake the pan to get the mussels well covered in the sauce.
Step 2: I like to remove the mussels as the open so the meat does not get tough, and put the opened mussels into a serving bowl.
Step 3: Discard any mussels which do not open and pour sauce over the mussels in the serving bowl and serve with some crusty bread and a side salad if you so wish.
