Ingredients

The ingredients are:
  • 8 ounces ground beef
  • 1/2 onion (diced)
  • 3 pounds potatoes (10 baby potatoes, 1 inch to 1.5 inch diameter, rough chopped)
  • 16 ounces frozen mixed vegetables
  • 1 can (28 ounce) crushed tomato
  • 24 ounces chicken broth (or beef stock, 3 cups, homemade is better)
  • 24 ounces water (or 3 cups)
  • 1 bay leaf
  • 1 teaspoon cumin
  • 1 tablespoon chili powder
  • 1/4 teaspoon red pepper
  • 1/4 teaspoon garlic powder
  • Salt, to taste

How to Make

  • Step 1: Do all of the browning and sautéing in the Instant Pot (IP) is first. Draining depends on the amount of fat.

  • Step 2: Dump all other ingredients into the IP and set on high pressure for 8 minutes, checking the vents to insure in proper position.

  • Step 3: Naturally decompress for 20 minutes and vent any remaining steam safely.
