  • 1/2 cup butter, room temperature
  • 2 large eggs
  • 1 to 1 1/2 cups white sugar
  • 2 teaspoons vanilla extract
  • 1 1/2 cups ripe mashed banana (mash banana with a fork or clean hands before adding)
  • 1/2 cup sour cream or plain yogurt
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts (optional or can use chocolate chips)

How to Make

  • Step 1: Preheat oven to 350 degree F. Set oven rack to second-lowest position. Grease and flour a loaf pan

  • Step 2: In a bowl beat butter with eggs, sugar and vanilla in a bowl. until creamy. Mix in banana and sour cream or yogurt until combined.

  • Step 3: In a bowl combine flour with cinnamon, baking soda and salt; add to creamed mixture; stir with a wooden spoon until just combined. Mix in nuts.

  • Step 4: Transfer to pan. Bake for about 1 hour or until bread tests done (baking time will depend on what size loaf pan you use).
