Ingredients

The ingredients are:
  • 1 cup cake flour
  • 1 1/2 cups walnuts, finely chopped (measure 1 1/2 cups before chopping)
  • 1/2 to 3/4 cup granulated sugar (or as desired, depening on how sweet you want the cookies)
  • 1/8 teaspoon salt
  • 2 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1/2 cup butter, room temperature
  • Powdered sugar, to coat (as needed)

How to Make

  • Step 1: Preheat the oven to 300 degrees F. Set oven rack to second-lowest position. Line a large cookie sheet with parchment paper.

  • Step 2: Mix all the dry ingredients (flour, walnuts, salt, sugar) in a large bowl. Add the vanilla, almond extract and butter combine everything together using clean hands (this may take a few minutes of hand-mixing).

  • Step 3: Using you hands roll into about a 1-inch ball or a little smaller. Place balls on the cookie sheet, spaced at least an inch apart from each other (at this point you may refrigerate the balls until ready to bake).

  • Step 4: Bake for about 15-20 minutes (these will spread out slightly when baked).

  • Step 5: When cookies are still warm but cool enough to handle coat the cookies in some powdered sugar. Set aside on a rack to cool completely.
